  1. 4 Slices Bacon (Diced)
  2. 8 Oz Cream cheese, softened
  3. 2 Oz Extra Sharp Cheddar Cheese (about 1/2 Cup)
  4. 1/4 Cup Green Onions, minced
  5. 2 teaspoons Fresh Squeezed Lime Juice
  6. 1/4 teaspoon Kosher Salt
  7. 1 Clove Garlic, minced
  8. 14 Jalapeno Peppers, halved legnthwise and seeded
  9. Cooking Spray
  10. 2 Tablespoons Fresh Cilantro, chopped
  11. 2 Tablespoons Tomato, chopped

  1. Preheat grill to medium-high heat. Cook bacon pieces in skillet over medium heat till crisp. Remove bacon from pan; drain on paper towel. Mix bacon, cheeses, green onions,lime juice,salt and garlic in a bowl, stirring well to combine. Divide cheese mixture evenly to fill pepper halves. Place peppers, cheese side up, on grill rack or grill grate coated with cooking spray. Cover and grill peppers 8 minutes or until bottoms of peppers are charred and cheese mixture is lightly browned. Place peppers on a serving platter; sprinkle with cilantro and tomato
